Strawberry salad, light sugar syrup and crispy French doughnuts

Serve 6

Salad:
50g caster sugar
10cl water
3 sprig of mint
500g strawberries

Doughnuts:
230g flour
50g sugar
50g butter, softened
2 eggs
5g baking powder
few drops of orange blossom flavor extract
50cl frying oil
 


Make doughnuts: Combine flour, sugar, baking powder, butter and orange blossom flavor. Add eggs, form a dough ball. Set aside 20 minutes.

Heat oil to about 180 ° c (dough float as soon as sunk but remains pale).

On a floured surface, roll down dough, cut strips of 2cm and 10cm form small nodes. Fry them until golden. Drain on absorbent paper.

Prepare salad: Boil water and sugar. Remove leaves (set aside) from mint sprigs, and infuse stalks of mint into the syrup removed from heat.

Wash, remove stalks from  strawberries and cut into 4. Mix strawberries and light syrup. Add small fresh mint leaves, serve with doughnuts and Marius rosé.
