Steack Filet with mild pepper sauce

Preparation: 10 minutes
Cooking time: 20 minutes

Serve 4

4 thick cut steak filets
6 large potatoes
2 tbsp oil + 1 tsp for grill
¼ tsp Sichuan Pepper
1 tsp Sweet paprika
2 tbsp fine bread crumbs
15cl veal stock
1 shallot
1 bunch  parsley
10g butter
salt


Wash and cut potatoes into large chips. In a bowl, mix potatoes, oil, paprika, bread crumbs and salt. Lay potatoes on an oven tray covered with a baking sheet. Preheat oven to 200°c. Bake potatoes 20 minutes.

Meanwhile, peel and mince shallot. Sweat it with butter in a small pan. Deglaze with veal stock and reduce to ¾. Add half pepper and salt.

Pepper steaks. Lightly oil a grill or a plancha. Cook beef on each side. Serve steaks with potatoes, pepper sauce and red Marius.
