Serves 6

500g of strawberries and raspberries
1 / 2 lemon untreated
100g sheep's milk cheese or cottage cheese
100g caster sugar 


Wash and hull strawberries. Wash the lemon. Remove the zest of the lemon, place in a bowl with the cheese, 50g sugar and beat the mixture until smooth and fluffy. Refrigerate.

Blend fruits with 1 / 2 lemon juice and the remaining sugar until smooth.

Serve the soup cold with a spoon of lemon cheese on top and with red Marius.
