Pumpkin flan verrines

Serve 6

500g pumpkin squash flesh
20cl single cream
4 eggs
¼ curry powder
3g salt
1 pinch nutmeg
1 pinch cinnamon
6 slices dry beef or viande des grisons
1 onion
1 garlic clove
30g butter


Cut pumpkin into pieces. Peel and thinly slice onion and garlic. In a casserole, melt butter, add onion and garlic, let cook 1 minute, add pumpkin. Cover and cook low-heat 15 minutes. Mash pumpkin into puree.

Prepare flan mixing: beat together eggs, cream, spices and salt. Butter 6 small ramekins.

Chop dry beef into small cubes. Mix with mashed pumpkin and flan mixing. Pour in ramekins.

Preheat oven to 160°C. Cook flans in bain-marie 20 minutes.

Serve with red Marius.
