Platter of grilled shellfish

Serves 6

6 jumbo clams
24 clams
1 liter of mussels
24 whelks
60g saltwort or fresh wakame
Mayonnaise:
1 egg yolk
1 tsp mustard
15cl neutral oil
1 / 2 lemon
1 bunch dill
1 tablespoon cream
1 pinch salt


Rinse the shells and place them with the wakame (or saltwort), on a baking platter or plancha. Light a BBQ and put the plate on it. Leave the shells open and their juices evaporate.

Prepare the sauce: mix the mustard, egg yolk and salt. While mixing the mayonnaise, add the oil in a slow trickle. Add lemon juice and cream. Finely chop the dill, mix into the sauce just before serving.

Serve platter hot with the herb mayonnaise and a glass of white Marius.
