Multicolor tomato tartare

Serve 4

2 red tomatoes
1 yellow tomato
1 black tomato
1 green tomato
A few cherry tomatoes any colour
50g parmesan
1 sprig of basil
1 tbsp Balsamic vinegar
2 tbsp olive oil
salt, pepper


Deseed tomatoes except cherry tomatoes. Cut into small cubes and cherry tomatoes in 4 quarters. Make Parmesan petals with a peeler. Wash and drain basil.

Prepare vinaigrette by combining vinegar, salt, pepper and oil.

Combine tomatoes, cherry tomatoes, parmesan, and basil. Set up in a pleasant way in the centre of a plate. Serve immediately drizzled by vinaigrette and with red Marius.
