Long leek pie

Preparation: 15 minutes
Cooking time: 35 minutes

Serves 4

150g short crust pastry
7-8 thin leeks
1 tsp Dijon mustard
2 tbsp grated Parmesan cheese
1 tbsp olive oil
salt, pepper


Wash the leeks and cut the green, leaving only the long white part. Poach in boiling and salted water until very tender, 8 to 10 minutes. Drain and cool.
Preheat oven to 220 ° c.

Roll out the dough on a baking sheet and cut into a rectangle that would hold the leeks lengthwise. Place the pastry on a oven trail.
Spread mustard, place on the leeks next to each other. Dust with Parmesan cheese, salt and pepper. Drizzle with olive oil.

Bake in the oven, 25 minutes. Serve hot with a green salad and a glass of white Marius.
