Goat cheese and thyme cakes

Goat cheese and thyme cakes

Preparation time: 10 minutes

Cook time: 30 minutes
Serves 12 mini-cakes or muffin tins

200g plain flour
2 tsp baking powder
100g dried goat cheese
10cl warm milk
5cl + 1tsp olive oil
4 eggs
50g emmenthal cheese, grated
1 tsp dried thyme
1/4 tsp salt
black pepper 


In a large bowl, beat eggs, add in flour and salt. Still beating, melt oil and warm milk. When the mixture is well combined, stir in grated emmenthal, thyme and pepper. Chop goat cheese into small chunks. Mix it in.

Slightly grease an mini-cake or muffin tin.

Preheat oven 180°c (350°f)

Spoon the mixture into tins (about 2 tbsp per tin) and bake about 15 minutes at the lower level of the oven.

Serve warm or cold with red Marius.
