Crostini with fresh goat-cheese, herbs and green broad beans

Serve 6

6 slices of sourdough bread
200g ricotta
300 g of green broad beans
5 sprigs of mint
5 sprigs of parsley
1 sprig of basil
Salt and pepper


Remove beans from the pods. Bring 1 liter of salted water to a boil. Blanch beans 2 minutes and drain. Cool them quickly with cold water. And peel them.

Wash, dry and chop herbs. Mix ricotta with herbs, salt and pepper. Toast bread and half.

Generously spread half toasts with herb ricotta, sprinkle with beans. Serve chilled with Marius rosé.
